# Expert Advice:

01 -
  • It comes together in one pot, which means less cleanup and more time to actually enjoy your meal.
  • The smoky ham and tender lentils create this deeply satisfying flavor that tastes far more complicated than it actually is.
02 -
  • Don't skip rinsing your lentils—grit or dust can hide in there and absolutely ruin the eating experience, and a quick rinse takes ten seconds.
  • Remove that bay leaf before serving because biting into one is surprisingly unpleasant and catches people off guard in the worst way.
03 -
  • If your lentils aren't softening after 40 minutes, they might be old—older lentils take longer to cook, so give it another 10 minutes and don't panic.
  • Toast your bay leaf and thyme in the pot for a few seconds before adding liquid if you want an even more pronounced herbal flavor that surprises people.
