09 - 2 cups assorted fresh berries (strawberries, blueberries, raspberries, blackberries)

# How-To:
01 - Preheat oven to 275°F. Line a baking sheet with parchment paper and trace an 8-inch circle as a guideline, then invert the paper.
02 - In a large clean mixing bowl, beat egg whites with an electric mixer on medium speed until soft peaks form.
03 - Gradually add superfine sugar, one tablespoon at a time, beating on high speed until the meringue is glossy and stiff peaks form.
04 - Gently fold in cornstarch, white vinegar, and vanilla extract using a spatula.
05 - Spoon meringue onto the prepared parchment, shaping it into a round with slightly raised edges to secure toppings.
06 - Bake for 1 hour and 15 minutes. Turn off the oven and allow the meringue to cool completely inside with the door slightly ajar.
07 - In a chilled bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
08 - Once the meringue shell is cool, transfer to a serving platter. Spread whipped cream over the center and mound fresh berries on top.
09 - Garnish with fresh mint leaves if desired and serve immediately.
